Kicking off another busy week with this super quick and easy Greek pasta salad 🙌🏼 This is one of those meals that I know I can throw together in just a few minutes that checks all the boxes of delicious, easy and nutritious ✨.
To make 👇🏼:
Boil pasta as per package instructions. Heat up 1/2 cup of edamame, and chop any veggies you want- my personal favourite are cherry tomatoes, cucumber, peppers, red onion, arugula, and kalamata olives. Combine with pasta, then drizzle with olive oil, lemon juice, dried oregano, and olive brine (all to taste). Enjoy! 💛
