Let’s taco bout easy meals 🙌🏼 Throughout the week my main priorities for food are 1) quick 2) delicious 3) nutritious ✨ People often comment that I must spend so much time cooking, and although cooking is one of my biggest passions, I definitely don’t spend much time doing it during the week between work, spending time with loved ones and relaxing 🤷♀️ instead I like meals that meet my three priorities to power me through the busy days, and I leave weekends for getting super creative in the kitchen 😍.
These tacos are the perfect go-to because they come together in just a few minutes and can be filled with whatever you have in your fridge! This week I chose brown rice (cooked from the day before, but quinoa would work too and is faster!), sweet potato, black beans sautéed with garlic, onion and smoked paprika, avocado, salsa and hot sauce 🌿 What’s your favourite taco combo?!
