Meal prepping for the week? I’ve got you covered with this nourishing Buddha bowl + tahini dressing ✨ Throw some chickpeas, sweet potatoes and veggies (I love beets, broccoli, carrots or Brussels sprouts!) on a pan and put a pot of rice on and you’re done 🌿.
To make 👇🏼:
Chop sweet potato and desired veggies into chunks and drain + rinse a can of chickpeas. Put everything in a bowl with 1 tsp garlic powder, 1 tsp of smoked paprika + 1 tsp oregano. Bake at 450F for 25 minutes. Meanwhile, cook a pot of brown rice. In a small bowl, whisk together 1/3 cup tahini, 1 tbsp maple syrup, 1/4 tsp garlic powder, the juice of 1 lemon and enough water to thin. Once done, combine everything in a bowl and enjoy! 💛
