Meal prepping my way into Monday like 🙋♀️✨ Buddha bowls are one of the easiest things to throw together with just a few simple prepped ingredients – my go-to’s are roasted sweet potato, broccoli, carrots + beets for easy veggies, and roasted chickpeas for plant-based protein 🌿 throw in some leafy greens + a tahini lemon drizzle and I’m a happy camper 😍.
To make the tahini lemon drizzle I whisked together 1/4 cup tahini, the juice of 1 lemon, 1/2 tsp garlic powder, 1/2 tbsp maple syrup + enough water to thin. You can make more of this and store it in an airtight container in the fridge for a simple, easy + quick salad dressing! 💛
