Mexican Inspired Black Bean & Corn Salad in a Baked Tortilla Bowl (Air Fried)🥗 We all gotta eat and take care of ourselves.The last two weeks have been heartbreaking & eye opening. I will continue to listen, learn, unlearn, & act. On my platform, I will continue to amplify black vegan businesses, content creators & cookbook authors. Food is love and that’s why I’m here…. so here’s a salad to keep you going and give you all the superpowers you need to get you through.✊🏼✊✊🏽✊🏾✊🏿 What you need: Dressing: 2 tbl olive oil, 2 tbl red wine vinegar, 2 garlic cloves minced, 1 tsp cumin, 1/2 tsp oregano, 1/2 tsp coriander, crushed red pepper, salt & pepper to taste. The Salad: 1 cup frozen corn defrosted, 1 cup cooked black beans, 1 cup cooked quinoa, 1/2 red pepper diced, 1/2 cup cilantro finely chopped, 3 green onions finely chopped (white & light green parts) , 2-4 large flour tortillas (mine were homemade kale tortillas, but we can talk about that another time 😉)
1️⃣ Whisk together dressing ingredients, adjust seasonings if needed
2️⃣ Mix Salad ingredients together, toss well with dressing. Marinate for 1/2 hour.
3️⃣Preheat Air-fryer to 350 F. Use an oven safe bowl , gently push tortilla down into the bowl place a smaller oven safe bowl in the middle of the tortilla to keep it down & hold in place.
5️⃣Heat tortilla till edges get crispy & holds its shape 3-5 min.Use tongs to remove tortilla from air-fryer, it will be hot
6️⃣ Take out middle insert.Flip tortilla over, still leaving it in the oven safe bowl. Heat 2-3 min more. Get another tortilla & repeat.
7️⃣Place salad in tortilla bowl, serve with some smashed avocado. Enjoy!! 💚💚💚💚
