Nothing like a warming bowl of tomato braised chickpeas on a chilly day ✨ This recipe has all the flavours of Chana masala with an added creaminess ? Not to mention it’s SUCH a simple recipe, making it perfect for weekend lunches or to meal prep for the week ?.

To make ??:
In a tsp of coconut oil, sauté 1 diced onion, 4 large cloves of garlic + a 1 inch thumb of ginger, minced, until onion is translucent. Add 1/2 tbsp curry powder, 1 tsp turmeric, 2 tbsp ground cumin, 2 tbsp ground coriander, 2 tbsp garam masala, 1 tsp chili powder, 1/2 tsp salt + 1/2 tsp pepper and sauté for 3 minutes. Add 1 can of diced tomatoes, 1 can of drained + rinsed chickpeas, 1/2 cup of unsweetened plant-based milk and 2 tbsp tomato paste. Simmer for about 20 minutes until flavours have developed (or cook in an instant pot at high pressure for 5 mins!). Once done, add 2 large handfuls of kale + the juice of 1 lemon. Serve on its own or with rice + enjoy! ?
