Pushing through long work days has me craving these homemade “cookies” ?? They’re naturally sweetened with dates and made out of oat flour, giving them a chewy, muffin-like consistency rather than traditional cookies ✨ Perfect for when that mid-afternoon hanger strikes ?.

To make ??:
In a food processor or high speed blender, blend together 1 cup of medjool dates (or regular dates soaked in hot water prior to blending to soften), 3/4 cup of peanut butter, 1 tsp vanilla extract, 2 tbsp of coconut oil, 2 tbsp of plant-based milk, 1 1/4 cup of oat flour + 1/2 tsp of baking soda. If the mixture is too thick to blend, add in 1 tbsp increments plant-based milk until it will blend. Once blended, stir in ~1/2 cup of chocolate chips. Spoon onto baking tray, and bake at 350 for ~10 minutes until lightly golden. Let cool and enjoy! ?
