Refuelled after a long run this afternoon with this falafel salad bowl ?? lemon-massaged kale with herb roasted chickpeas, roasted sweet potato, red onion, fresh cucumber and kalamata olives all topped with a creamy lemon tahini dressing ?? to make the dressing whisk together 1/4 cup tahini, the juice of 1 lemon, 1 clove of minced garlic, 1 tbsp of olive oil, water as needed (about 1/4 a cup) and a pinch of salt and pepper until smooth. Serve over salads, Buddha bowls, or over wraps ❤️
