Relying on quick and easy meals like this burrito bowl to get me through the last few weeks of my Masters ✨ Having the ingredients prepped like some brown rice, smoky black beans + veggies on hand make throwing this together SO easy when you’re crunched for time 🙌🏼.
To make 👇🏼:
Cook brown rice or quinoa as per package instructions. Cook sweet potato in the microwave or in the oven until fork tender. Drain and rinse 1 can of black beans, then Sauté in a pan over medium heat with 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp chili powder, 1/2 tsp of cumin + a pinch of salt + pepper. Combine everything in a bowl with veggies of your choice + top with lime juice + sriracha + enjoy! 💛
