Relying on this smokey black bean burrito bowl with vegan sriracha aioli to get me through a busy day ✨ I always forget about burrito bowls, but they’re seriously one of the easiest and most delicious meals to throw together ?? They’re also perfect for packing and bringing to work or school, making them a busy persons life saver ?.

To make ??:
Cook rice or quinoa as per package instructions. Meanwhile, drain and rinse a can of black beans. Heat in a pan with 1 tsp smoked paprika, 1/2 1 tsp chili powder, 1 tsp garlic powder, 1 tsp onion powder + a pinch of salt and pepper (or all to taste). Sauté over medium heat until the beans have heated through and start to come apart a bit. Whisk together 1 tbsp vegan mayo, 1/2 tsp sriracha + the juice of half a lime. Chop desired veggies (I used shaved carrot, cucumber, arugula + red onion and should have used sweet potato!), assemble the bowl and drizzle over aioli. Finish off with a squeeze of lime and enjoy ?
