ROASTED BRUSSEL SPROUT TACOS 😋
Tag a friend and make this super easy, delicious & HEALTHY tacos 🌮 ✨
Ingredients: -1 lb brussel sprouts -1 tbsp avocado oil or olive oil
-1/2 tsp salt -1/4 tsp freshly cracked pepper -1 tsp garlic powder – 6-8 corn tortillas – 1-2 Avocados
– limes
-cilantro
– (optional) Pesto veganese (I used follow your heart brand) * you can also use any type of creamy sauce!
-(optional) salsa
-(Optional) shredded cabbage or simply thinly slice a few raw brussel sprouts *its gives a nice crunch.
Method:
1.Line a baking pan with parchment paper and preheat oven to 450°F.
2.Cut the Brussels sprouts in half, add to the baking pan and drizzle over oil then season with garlic powder, salt and freshly cracked pepper. Mix with your hands making sure each brussel sprout is evenly seasoned.  Arrange the brussel sprouts cut-side down. Place in preheated oven and roast until softened and deeply browned, about 20 to 25 minutes, check the Brussel sprouts half way through cooking and if they’re already deeply browned on the bottom, carefully toss with a spatula a few times and return to oven.
3.Heat tortillas… I would suggest my TIP when heating up tortillas (THIS ONLY works with corn tortillas)…
Heat a non stick pan over medium-high heat.
Grab a corn tortilla and dip it in a bowl of water, making sure both sides are wet, remove from water, shake the tortilla then add to HOT pan. Cook for about 25-30 seconds then flip and cook for additional 25-30 seconds .  Continue this technique for the remainder of the tortillas!
3. For assembling simply spread a tsp amount of veganese or whatever sauce you choose to use, followed by the roasted Brussel sprouts, sliced avocado, salsa, squeeze of lime, cilantro and any other toppings your heart desires!
