Salads are such a quick meal to throw together, but unless they have some protein, carbs + fat they only keep me full for about 2 minutes 🤷♀️ That’s why I love adding things like chickpeas/beans (for carbs, protein + fiber), quinoa (carbs, fiber + protein), and olives/tahini/nuts/seeds (fat) to make sure I’m properly fueled and energized 💪🏼 What’re your go-to salad additions?! 🌿.
This is a spin off a Greek salad with arugula, fresh tomatoes, cucumber, red onion, olives, quinoa + chickpeas, topped with olive juice, the juice of 1/2 lemon + oregano 🍃.
