Sweet Potato & Black Bean Flautas: Really EASY to make & delicious to eat ?If you’re not sure what flautas are, well it’s kind of like a taco but all rolled up in the shape of a flute – btw an instrument I played for almost 10 years, and yup I was a total marching band geek. Anyway, these flautas are baked for a healthy version, but you could also fry them.
What you need: 2 cups sweet potato diced small, 1 can black beans partially drained, 6 green onions minced, 1 clove garlic minced, 1 cup frozen corn defrosted, 1/4 cup store bought salsa, 2 tsp chili powder, 1/2 tsp cumin, 1 package of soft flour tortillas (6in) 20 count1️⃣On stovetop in med sauce pan, add enough water to cover potatoes, bring to a boil, then simmer 5-7 min, drain, let cool
2️⃣In a large mixing bowl, mash black beans with potato masher or the back of a fork as much as you can, then add all ingredients including sweet potatoes, mix well
3️⃣ Add 1 1/2 -2 tbls mixture to tortilla, tightly roll into a tube, place seam side down onto large pan, lined with parchment. Repeat.4️⃣Mist flautas with oil, bake 15 min at 400 F flipping halfway through. I served mine topped with homemade quac, chopped tomatoes & sour cream ?Enjoy. Happy Wednesday
