Tofu & Tater Mediterranean Bowl: Enjoy tofu with all the Mediterranean flavors by using dried herbs that you most likely you have in your pantry. Enjoy your crispy on the outside & tender on the inside tofu with roasted potatoes, topped with a tangy tahini dressing. Happily, this meal comes together pretty quickly which is pretty darn exciting. I used pre pressed tofu which help saves a bit of time. Happy Friday!!

What you need:Seasoning Mix: 1 tbl dried oregano, 2 tsp crushed dried thyme, 1 tsp each of dried basil, onion powder, & crushed marjoram & 1/2 tsp garlic powder; 1 block Extra Firm Tofu (15 oz, pressed) cut into 1/2 in cubes, 1/3 cup cornstarch, 2 lbs mini red potatoes quartered Dressing: 1/4 cup olive oil, 1/4 cup runny tahini, 1 tbl of seasoning mix, 2 tbl lemon juice, 2 tbl red wine vinegar, 2 tbl warm water, 2 tsp maple syrup, 1/2 tsp Dijon mustard, s/p to taste
1️⃣ Mix seasoning in a small bowl. Set aside.
2️⃣ Add tofu cubes to a large mixing bowl, drizzle with 1 tbl olive oil & gently mix till covered, add desired amount of s/p. Next add cornstarch & shake bowl vigorously to flip & coat cubes. Then add 1 tbl of seasoning mix, shake bowl vigorously once more to flip & coat. Alternatively, you can coat tofu by placing in a zip lock bag, close it up & shake to coat with cornstarch first & then seasoning.
3️⃣ Spread potatoes on a large parchment lined baking sheet, drizzle & coat with 1 tbl olive oil, then add desired amount of s/p. Roast at 400 F 30-40 min. Leaving some space on pan for tofu, which you will add later.
4️⃣ While potatoes are roasting, heat a cast iron pan with 1 tbl neutral oil on med heat, when hot, add tofu cubes in one layer, be sure to leave some room between each piece. Flip cubes (by shaking pan or using tongs) until they become crisp & golden on each side, about 5-8 minutes. I cooked mine in 2 batches using a 10 in pan.
5️⃣ After cooking tofu, add tofu to the sheet pan & roast for 10 min.
6️⃣ To make dressing: Use a mason jar or any container with a lid, add dressing ingredients & shake vigoursly to mix well. Adjust s/p to taste.
7️⃣ Serve with your favorite salad fixings & top with dressing. Serves 2-3.Enjoy!
