What I wish lunch looked like today ✨😂 The reality was that I ate hummus and veggies + crackers at my desk while plugging away at work 🤷♀️ Although I’m a huge advocate of eating mindfully and taking time to prepare a delicious and nutritious meal, that honestly just isn’t always the reality and that’s OKAY 🙌🏼 Today I chose to prioritize getting things done to ease my stress, so I can relax tonight and hopefully take some more time to mindfully make and eat dinner 🌿 It’s all about balance, right??✨.

Details of this beautiful bowl: sweet potato and chickpeas tossed in smoked paprika and garlic powder, roasted at 450F for 25 minutes. Served with sliced beets, massaged kale, quinoa and a huge dollop of hummus 💛
