Wishing I was coming home from work to this nourishing bowl I made a few nights ago 🙌🏼 This was the perfect bowl to throw together when I was craving something filling and delicious but that could be made quickly after work (does anyone else get hangry after work no matter how much lunch you seem to bring?) 🤷♀️ I made up this sauce on the spot and was SO happy with how it turned out. It has the perfect balance of sweet, savoury and tangy and it was perfect drizzled on bowls like this or cold noodle salads 🌿.
Blend together 1/4 cup peanut butter, 1/2 inch chunk of ginger, 1 tbsp soy sauce, 1/2 lemon juiced and 1 date with enough water to blend. Enjoy! 💛
