With the cold weather fast approaching here in Canada I’ve been straying away from cold foods and been craving allllllll the warming foods ❄️ Cue the Buddha bowl ✨ Perfect because all the ingredients can be thrown on one baking tray, and sauce can be as simple or as complicated as you want! 💛.
Today I went for a mix of roasted chickpeas, carrots, beets, broccoli + sweet potato, all seasoned with garlic powder + smoked paprika and baked at 450 deg F for 25 minutes. Meanwhile, I whipped up a miso tahini dressing with 1 tsp miso paste, 1.5 tbsp tahini, 1 tsp soy sauce, 1/2 tsp sesame oil, the juice of 1 lime + 2 tbsp water. I combined all the roasted veg, sauce + some massaged kale in a bowl and it was the most delicious combo ever 😍 Enjoy!
