6 Ingredient, Vegan, Pumpkin Breakfast Cookies ✌?
These little cookies have been my sweet savior this week and I’m so excited to share them with y’all! They’re nice and soft on the inside and the chocolate chips on top are just perfect ✨ They’re made with @flahavansusa Steel Cut Oats which are 100% whole grain, non-GMO Project Verified, and naturally gluten free and vegan which is perfect for your favorite gluten free gal over here. ~ 1/3 cup pumpkin puree
~ 1 cup almond flour
~ 1 cup steel cut oats
~ chocolate chips (measure with the soul)
~ 1/2 cup applesauce
~ 1/4 cup honey
And 1/4 tsp baking soda too, but I don’t count that as an ingredient lol ??♀️
Combine all ingredients in a big bowl and mix super well. Let the batter rest in the fridge for about 20-30 minutes. Then, use an ice cream scoop to measure out even amounts of batter and place on a non stick baking tray. Top with extra chocolate chips and bake at 350 for about 45 minutes. Cool and enjoy!
