Apparently, I completely missed #nationalcookieday… but it’s never too late to post one right?? I needed something sweet and soft to eat this week so I made pumpkin spice oatmeal cookies ✨ I baked these for a shorter time than needed so they came out extra soft and just melted in my mouth (which is what I need thank you wisdom teeth ?) It may be past thanksgiving, but I still love using pumpkin purée in my recipes because it’s naturally a little sweet. Happy Tuesday!

Recipe: makes 15 pumpkin spice oatmeal cookies
~ 1 cup gluten free oats
~ 1/3 cup pumpkin purée
~ 1/4 cup unsweetened apple sauce
~ 1/4 cup smooth almond butter
~ lots of cinnamon
~ lots of pumpkin spice
~ 2 tablespoons unsweetened almond milk
~ @enjoylifefoods dark chocolate chips (totally optional)
Mix all ingredients super well and form into desired shape on cooking sheet. Bake at 350 until ready ?
I added a frosting swirl on top using leftover pumpkin purée and melted chocolate mixed super well ??
