I almost never post a savory breakfast, but when I do it almost always has sweet potato ? Today I’m prepping some really exciting things that I can’t wait to share with you guys. This surprise includes lots of sweets so I wanted to start my day with a little savory so I can leave all the room to test as I prep ? I made a little brunch “salad” using one small sweet potato and 1/4 onion. I chopped them into cubes, coated in avo oil, and added sea salt and paprika. I toasted these at 400 for about 15 minutes until they were soft. I also made a soft boiled egg, added arugula and half a lemon for the perfect dressing. This meal was exactly what I needed to get my body fueled and ready for a long day in the kitchen ? I’m honestly way too excited lol! Have a great Saturday friends!
