I didn’t even mean for this to happen, but happy waffle Wednesday! I made these during my meal prep this weekend and I couldn’t wait to share ? Sometimes I don’t have a waffle mix on hand (@simplemills) so I have to make my own, which is just as fun! I like these because you can make them sweet or savory and add your own toppings for the perfect meal any time of the day… not just breakfast ? Make sure to use #bakedbychen if you get a chance to make these ?

Sweet potato waffles:
~ 1 and 1/2 grated sweet potato (I used my ninja)
~ 2 whole eggs, 2 egg whites ?
~ 3 tbs coconut flour
~ 1/3 cup applesauce (omit if you want savory waffles)
~ cinnamon (replace with savory seasoning for a different flavor)
* Mix all ingredients. The mix isn’t super liquidy, so scoop the amount you want and gently press into the waffle iron before closing it. Place on baking sheet when you’re done, and bake for five minutes to make them extra crispy ??
