It’s been way too long without a new recipe, so I’m starting Monday off with a great one 🤗 Last night in my stories I talked about the importance of meal prepping! Every week I prep my snacks and lunches for school, but sometimes I’ll make an extra sweet treat to eat whenever I’m craving it. Because, let’s be honest, there’s not one day that passes that I don’t crave something sweet 😏 So this week I made breakfast oatmeal bars topped with chocolate sweet potato frosting. You can totally make these your own and add whatever else you like to add to your oatmeal. So have fun with them and let me know if you get a chance to try them! Breakfast Oatmeal Bars:
1 1/2 cup @bobsredmill gluten free oats
2 cara cara oranges, squeezed and use all the juice (use pulp!)
1/3 cup applesauce
1/4 cup @foragerproject cashew milk
1/4 cup chopped almonds
1/4 cup coconut flakes
2 tbs @enjoylifefoods mini chocolate chips
5 pitted dates chopped finely
Mix all ingredients and press firmly into a baking tray (I used 9×9 square). Bake at 350 until the top is golden brown and firm. Let cool and add sweet potato frosting (boil one sweet potato, mash, and mix with 2 tbs @enjoylifefoods chocolate chips until melted)
Top with crushed almonds, coconut, whatever you want! ENJOY ✨
For best results, let the bars cool in the fridge overnight and then cut and eat!
