It’s #mealprepmonday! If you guys don’t know by now, I’m obsessed with meal prepping. As a teacher, it really saves my week. I can’t imagine trying to survive without it ? When I first started doing it, I tried to get so complicated with it. I would make so many different foods to try to satisfy any possible craving, but I would be in the kitchen for hours! It was just too much for a Sunday let’s be honest. These days I just try to think of a specific type of food I could eat all week long. I make a couple of different types of veggies, I always add a protein, and then sweet potato fries 100% of the time ?
One of my favorite preps is Mexican food. I just grill up veggies in the oven, make some cubed chicken, and bake sweet potato chunks (not exactly Mexican but just go with it). You can add all of this to a huge burrito bowl, make lettuce tacos, wrap it all up for a burrito ? and my personal favorite: nachos with @sietefoods. If you ever need meal prep tips I’m your girl!
