It’s Monday and I’m back at work… not super thrilled to be here to be totally honest with y’all, but I’m trying to stay positive and focus on the happy things in life 🤗 I get to see one of my best friends super soon, it’s almost my anniversary with my bf, and I FINALLY got to try @avokween granola butter. It’s been on the top of my list of foods to try and it did not disappoint 😍 It tasted like cookie butter, just without the guilt or the stomach pain. I topped my carrot and apple baked oatmeal with more than the serving size suggested, but it was just so dang good!! I also added some frozen berries, baked apple slices, coconut chips, and of course, @purely_elizabeth plain granola for the perfect crunch. Carrot and apple baked oats:
~ 1/2 cup gluten free oats
~ 1/3 cup @foragerproject cashew milk
~ 1/3 cup grated carrot
~ 1/2 chopped apple
~ 3 tbs applesauce
~ cinnamon!
Mix well and bake at 350! Top and enjoy ✨
