✨ N E W ✨ It’s me again! Yes I’ve already posted one thing today, but it’s been way too long without a bowl of oats so here you go 👆🏼 I made a simple apple and zucchini overnight oats and topped it with all the goodies! I even made my own topping of cinnamon and cacao roasted chickpeas 😍 I love all my “healthy” store bought toppings, but sometimes I like to get creative and make my own! Along with the chickpeas I added @foragerproject yogurt, @wild_friends almond butter, @purely_elizabeth granola, frozen berries, and apple slices 🍎 I definitely ate this for lunch today because oatmeal is acceptable any time of the day, right?? Apple and zucchini overnight oats:
~ 1/2 cup gluten free oats
~ 1/2 cup almond milk
~ 2 tbs applesauce
~ 1/3 cup grated zucchini (make sure it’s dried out)
~ 1/2 chopped apple
I like to warm mine up before I eat them because it just makes my belly happy 🤗
Cinnamon and cacao roasted chickpeas:
~ 1 can of chickpeas (rinse and dry)
In a bowl add to the chickpeas:
~ 1 tbs honey
~ lots of cinnamon
~ cacao powder
Mix well and roast in the oven at 250 until they’re golden brown. Let sit and completely cool before storing them so they get crunchy 😊
