I never thought I’d be the kind of girl that found joy in cooking/baking ? I always hated being in the kitchen growing up. I loved the smells, but I never knew how to create them. I’d watch my grandma cook for hours, my mom create the same amazing recipes, my dad would make us dinner, and I could barely boil an egg ??‍♀️ but I’m honestly so proud of how far I’d come. Being in the kitchen these days actually brings me joy. Creating a new tasty recipe puts a smile on my face and I’m always so excited to share it with the people around me. Even though I was weirdly extra stressed on Monday, I found 10 minutes to make these ?? Yes, a total of 10 minutes is all you need to make these carrot cake bites ?Eating these gave me all the fall feels. They’re super easy, all you need is 6 ingredients. Recipe below! Hope you guys enjoy

Carrot cake bites:
~ 2 cups @bobsredmill gluten free oats
~ 2 cups shredded carrot
~ 1 tsp cinnamon
~ 5 large dates
~ 1/3 cup @artisanaorganics cashew butter
~ 1/3 cup applesauce
Throw all ingredients in a food processor and create a sticky mix. There should still be bits of oats left, but for the most part, almost dough like! Roll into balls, coat in shredded coconut, and store in the fridge!
Tip ? Slightly wet your hands in order to roll the balls smoothly. The dough won’t stick to your hands which makes it so much easier
