P u m p k i n spice loaf! Took my pumpkin muffin recipe and changed it a little to get a super soft and moist (sorry ?hate that word) pumpkin spice loaf. This recipe is gluten, dairy, and refined sugar free! I’ve been adding it to my breakfasts as an extra pick me up or eating it with almond butter as a post workout snack ?? Honestly, I think I finished this loaf in about three days ??‍♀️

Recipe: one loaf (about 8 slices)
~ Mix wet: 2 whole eggs, 1 cup pumpkin purée, 1 cup unsweetened almond milk, 1 tsp vanilla, 1 freshly squeezed orange, 3 tbs unsweetened apple sauce ?
~ Mix dry: 1 tsp cinnamon, pumpkin spice, 1 cup gluten free oats, 1/2 cup almond flour, 1 tsp baking powder, and 1/3 cup @enjoylifefoods dark chocolate chips ❤️
~ Mix wet and dry and then I topped my loaf with extra chocolate chips! Bake at 350 and use a skewer to check if it’s ready.
