Pumpkin Spice Muffins ✌?
Truth time: I’ve been in a work rut for a little while now so I really didn’t have it in me to spend a couple of hours writing up a blog post… however, I wanted nothing more than to share this new gluten and dairy free recipe with y’all so here you go ✨
Ingredients:
~ 3/4 cup pumpkin purée
~ 1 1/2 cups gluten free 1 to 1 baking four
~ 2 eggs
~ 1/2 cup applesauce
~ 1 cup coconut sugar
~ 1/4 cup maple syrup
~ 1 tsp vanilla
~ 1 tsp cinnamon
~ 1/2 tsp baking soda and another of baking powder
~ lunch sea salt
~ chocolate chips (measure with your heart of course)
Recipe:
1. Starting by combining your pumpkin, eggs, vanilla, applesauce, and maple in a bowl and whisk well.
2. Add in your coconut sugar, flour, cinnamon, baking soda/powder, and sea salt and mix to form your batter!
3. Add the chocolate chips and stir.
4. Line a muffin tray with liners or spray with non stick spray, fill about 12-14 cups 3/4 of the way up, top with chocolate chips, and bake at 350 for about 35-40 minutes.
