Since breakfast today was the same as yesterday (check out my story 😋) I thought I’d share my newest creation: chocolate chip pumpkin and oat muffins 😍 These were super easy to make and are gluten and dairy free! Just a side note- I don’t bake with sugar or added sweetener so if you’re trying one of my recipes out, feel free to add your sweetener of choice!
Recipe: 6 muffins
~ Mix wet: 2 whole eggs, 1/2 cup pumpkin purée, 1/2 cup unsweetened almond milk, and 1/2 tsp vanilla
~ Mix dry: 1 tsp cinnamon, 1/4 tsp salt, 1 cup gluten free oats, 1 tsp baking powder, and 1/3 cup @enjoylifefoods dark chocolate chips ❤️
~ Mix wet and dry and bake at 350! I don’t set a timer usually, I just watch them and use a toothpick to check if the insides are ready. These took about 20 minutes, but keep an eye on them 😄
