Spent the whole day out in New York City and I’m exhausted and frozen, but so happy! Got to see new places and try new foods that i can actually eat 🍦🥑 I’m excited to share some of the foods i was able to eat, but for now i wanted to share a new recipe! With thanksgiving right around the corner, maybe you’re still trying to think of some last minute easy recipes! This was a quick soup my mom helped me make with the ingredients we already had at our house 🍲 i cored and roasted one acorn squash to serve the soup in and it was 👌🏻 Hope everyone has an amazing Thanksgiving because you deserve it ❤️

Recipe: about four servings
Start by roasting chunks of 1 butternut squash in the oven. After it’s ready, throw it in a pot with:
~ onions, celery, and carrot mix (i buy a bag pre cut and frozen)
~ dill, garlic, and ginger
~ salt, pepper, and turmeric
~ chicken stock or water to cover the veggies
~ 1/4 cup brown rice
Let everything sit and boil for about 30 minutes. Stir occasionally and add a little water if necessary. i finished the soup by pureeing everything to make a thick consistency and served in my acorn squash bowl 🙌🏻
