Starting off Monday with a recipe I’ve been meaning to share for way to long! If you’re in need for a holiday recipe, you’ve found a good one 😍 These are gluten and dairy free “mini peppermint and chocolate pies” inspired by @allieseats_! Even my panel of taste testers (my mom and brother) approved this recipe. Fulton County schools got cancelled today so I’m using this time to do some lesson plans I’ve been procrastinating on and go to some yoga of course 🤸🏽‍♀️ Hope y’all have a productive Monday!

Mini peppermint and chocolate pies:
✨ For the crust:
~ 1 1/2 cups almond flour
~ 1/4 cup coconut flour
~ cinnamon
~ one egg
~ 1/2 tsp vanilla extract
~ 1/2 tsp baking soda
~ sprinkle of salt
~ one freshly squeezed orange
~ 2 tbs cinnamon apple sauce
Mix all ingredients and use the back side of a mini muffin tray to press dough into the right shape. Bake at 350 until the crust looks golden brown. Let cool and gently peel the crusts off (I had to hit the back side and let them fall off gently)
✨ For the filling:
~ 1 mashed sweet potato
~ 1/4 cup @enjoylifefoods chocolate chips
~ 2 tbs cinnamon apple sauce
~ cinnamon
Melt chocolate and mix all ingredients well. Scoop mixture into the cups and top with crushed candy cane to get into the holiday spirit ❤️
