Low-Carb Döner Rolle: German Dürüm Döner Fit Recipe (Under 6g Carbs)
In Germany and across Europe, the Döner Kebab is the undisputed king of street food. However, traditional Dürüm Döner wraps are made with huge, refined flour flatbreads that deliver over 75 grams of fast-digesting carbohydrates and upwards of 850 calories.
This revolutionary Low-Carb Döner Rolle delivers all the spiced, savory, garlicky street-food satisfaction of an authentic Berlin Dürüm while keeping net carbohydrates under 6 grams per hearty roll.
The Secret: The 2-Ingredient High-Protein Wrap
Instead of flour, our wrap uses an authentic German fitness technique: blending eggs and smooth quark (or light cream cheese) baked thin on parchment paper. The result is a pliable, soft flatbread that rolls cleanly without tearing.
Ingredients (Serves 2)
For the Low-Carb Wrap:
- 3 Large Eggs
- 1/2 cup (125 g) Smooth Quark (Magerquark) or 0% Greek Yogurt
- 1/2 teaspoon Sea Salt & Italian Herbs
For the Spiced Döner Meat:
- 10 oz (280 g) Chicken Breast or Lean Beef Strips, sliced razor-thin
- 1 tablespoon Olive Oil
- Spices: 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp smoked paprika, 1/2 tsp garlic powder, salt, and black pepper
For the Fresh Salad & Garlic Yogurt Sauce:
- 1/2 cup Shredded Crisp Red Cabbage & 1/2 cup Iceberg Lettuce
- 1/4 Red Onion, thinly sliced and tossed with sumac
- 1/2 cup 0% Plain Greek Yogurt mixed with 1 minced garlic clove, fresh dill, and lemon juice
Step-by-Step Instructions
- Bake the Wrap: Whisk the eggs and quark with salt until smooth. Pour onto a parchment-lined baking sheet and spread into a thin rectangle. Bake at 350°F (180°C) for 12–15 minutes until set and pale golden. Let cool for 3 minutes.
- Sear the Meat: Heat olive oil in a skillet over high heat. Add the spiced meat strips and sear vigorously for 5–6 minutes until edges are crispy and browned.
- Assemble & Roll: Spread the garlic yogurt sauce over the baked wrap. Layer with warm spiced meat, shredded cabbage, lettuce, and sumac onions. Roll tightly like a burrito, slice in half, and enjoy warm!
