Ingredients (makes about 6 servings of frozen whip)
- 3 tablespoons instant coffee or instant espresso (decaf optional)
- 3 tablespoons very hot water (just off the boil)
- 1/4 cup zero-sugar honey substitute made with allulose/monk fruit OR 1/4 cup liquid allulose
- 10–15 drops vanilla stevia, to taste (optional)
To serve per drink:
– Ice
– 8 ounces (240 ml) skim milk or fat-free dairy milk (Attack/Cruise). For later phases, unsweetened almond milk or your preferred milk.
Equipment

Instructions
1) Add instant coffee, zero-sugar honey substitute (or liquid allulose) and optional vanilla stevia to a mixing bowl.
2) Pour in the very hot water. Start mixing on low to combine, then increase to high and whip 2–5 minutes, until pale, thick and glossy with firm peaks. Scrape down the bowl as needed.
3) Transfer the whipped coffee to a shallow, lidded freezer-safe container. Freeze at least 8 hours or overnight. It should remain soft enough to scoop.
4) For each drink, fill a glass with ice and add 8 ounces skim milk (or phase-appropriate milk). Scoop about 1/6 of the batch (roughly 2 heaping tablespoons or 20–25 g) into the glass. Let it soften briefly, then stir to create a creamy iced latte.
Tip: If mixing by hand, it may take considerably longer to reach stiff peaks.

Tips for success
- Only instant coffee or instant espresso will whip correctly.
- Measure hot water carefully. Too much liquid prevents firm peaks and can make the frozen texture icy.
- Allulose helps keep the mixture soft-scoop in the freezer. Erythritol tends to recrystallize and can make it gritty or hard.
- Taste before freezing; foods often seem slightly less sweet once frozen.
- Keep the container tightly covered to protect flavor and reduce ice crystals.
Easy variations
- Decaf: Use decaf instant coffee.
- Vanilla latte: Add a little extra vanilla stevia or a few drops of alcohol-free vanilla extract.
