Why this Dukan-friendly mug brownie works

It’s flourless, sugar free, portion-controlled, and designed with Dukan phases in mind. Expect a soft, fudgy center and deep cocoa flavor without added sugar or nut flours.

Ingredients (Dukan-compliant)
- 3 tablespoons (45 g) fat-free Greek yogurt (0%) or fat-free skyr/quark
- 1 large egg yolk (for fudgy texture) OR 2 tablespoons (30 g) liquid egg whites for a leaner, cake-ier version
- 1 tablespoon (7–8 g) unsweetened, reduced-fat cocoa powder (counts as 1 tolerated item in Cruise)
- 1–1½ tablespoons granulated erythritol or monk fruit/erythritol blend, to taste (or 10–12 drops liquid stevia/sucralose)
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- Pinch of salt
- 1–2 teaspoons water if needed for thinning (batter should be thick but spoonable)
Optional but allowed in Cruise and beyond:
– 1 teaspoon instant espresso powder (boosts chocolate flavor; coffee is allowed)
– 1 tablespoon (7–8 g) oat bran to add fiber and satiety (counts toward your daily allowance; this will make it slightly less fudgy)

Instructions
Microwave method (fastest)
1. In the mug, whisk yogurt, sweetener, vanilla, and egg yolk (or egg whites) until smooth.
2. Add cocoa, baking powder, and salt. Stir until fully combined. If very thick, add 1–2 teaspoons water. Scrape sides so the top is level.
3. Microwave on high for 35–50 seconds. The top should be just set and springy at the edges with a slightly soft center. Rest 1 minute to finish cooking.
4. Enjoy warm. The center will be fudgy.
Oven method
1. Preheat to 350°F (175°C). Grease a small ramekin with a quick mist of cooking spray if desired.
2. Mix the batter as above, transfer to the ramekin, and bake 8–10 minutes until the edges are set and the center is just slightly soft.
Air fryer method
1. Preheat air fryer to 320°F (160°C) for 3 minutes.
2. Fill a ramekin with batter. Air fry 6–8 minutes until set at the edges and a touch soft in the center. Rest 2 minutes.
Tips for best results
- Texture control: An egg yolk gives the richest, fudgiest result. Using egg whites lowers fat and can make the cake a bit more cake-like.
- Don’t overcook: Stop the heat when the center is still slightly glossy; it will firm up as it rests.
- Sweetness: Start modestly and adjust to taste. Different sweeteners vary in intensity.
- Cocoa choice: Reduced-fat, unsweetened cocoa keeps this more aligned with Dukan. Count it as a tolerated item in Cruise.
- Oat bran option: If adding 1 tablespoon, reduce cocoa to 2 teaspoons to keep it moist, and add 1 additional teaspoon water if needed.
- Protein boost: Using skyr/quark or the egg-white version can increase protein per serving.
