Braised veggies noodle soup with dumpling – ‘红烧面’?
Happy Monday, friends?. Hope everyone had a great weekend. Sharing a fragrant, spicy and delicate soup made from scratch that taste just as good as is. Can you tell I love noodles soup yet??
Recipe (serves 2-3)
~ Dried udon noodles
~ 2 cups blanched bok choy
~ homemade wontons with different wrapping (see few posts back for filling ingredients)
Soup ingredients:
~ 1/4 cup ginger chunk
~ 3-4 cloves garlic (mashed)
~ 1 medium Daikon (~1lb cut into chunks)
~ 2 small carrots (cut into chunks)
~ 8 caps of Chinese mushrooms (destemmed)
~ 4 roma tomatoes (cut into wedges)
~ 6 cups veggie stock
~ Place spices in a cheesecloth & tie it – 1 cinnamon stick, 8 cloves, 2-3 star anise
Place all soup ingredients in a big pot and boil, turn to low-med and simmer for 2-3 hours. You may use instant pot to reduce cooking time. Remove spice bag halfway during cooking. Season with:
~ 3 tablespoons Sichuan hot bean paste, 2-3 tablespoons brown sugar, 3 tablespoons soy sauce, salt (if needed).
More hot bean paste if you want a spicier soup.
Serve with cooked noodles, bok choy and homemade wontons. Hope you like this version. Have a great #meatlessmonday
