an easy lunch/dinner idea for you guys ☆ all you need is three simple ingredients & the recipe makes 7-8 hash browns! I topped them with a layer of @goodfoods queso, avocado slices, & hemp hearts, but ketchup is also really really good! happy friday eve! || #hannahharvestinghealth

Sweet Potato Quinoa Hash Browns-
i n g r e d i e n t s-
1 cup sweet potato noodles {cut into small pieces}
1 cup cooked quinoa {I found a cooked bag at @wholefoods}
2 @vitalfarms eggs
Salt/pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
d i r e c t i o n s-
1. In a large bowl, whisk together the egg & salt/pepper.
2. Stir in the noodles and quinoa.
3. Lightly grease a pan (I used olive oil) and set the temp to medium heat.
4. Use a big spoon to make little circles of batter on the pan and cook for 2-3 minutes on each side {or until crispy.} enjoy!
