Had to make more of @dani_nemeh cashew cheesecake bars because they’re too good to go too long without ??This time I used blueberries (thanks for the idea @restoring_radiance !!) and they’re my fav so far, but I still need to try blackberry! So easy and it makes for the perfect breakfast, snack, or dessert ? I’ll include the recipe below ??

Crust Recipe: (put into food processor and then spread in an 8×8)
1 bag @purely_elizabeth original granola (didn’t have that so I used @wildwayoflife coconut cashew granola and added in a little @onedegreeorganics granola too, peep the dark spot of granola in the middle)
1/3 cup ghee or coconut oil
Filling Recipe: (put into food processor then pour over granola crust and freeze for at least 3 hours)
1 1/2 cups cashews (soaked for 3 hours)
3/4 cup blueberries
1/3 cup melted coconut oil
1/3 cup maple syrup or honey
Juice of 1 lemon
1 tbsp vanilla extract
