Things have been a little crazy for me this past week…I’ve been a little absent on the blog. I set a goal for myself this month and I’m sticking to it – it involves lots of pictures, writing, and excess amounts of different foods. Any guesses on what I’m working on it? ??

In the meantime, I’m still doing my thing in the background, I just haven’t shared as much. I’m still making protein balls for my husband too! I tried to make a bigger batch of these 6-INGREDIENT
?SALTED CARAMEL PROTEIN BALLS? because I had a feeling that he’d REALLY like them…and he did. They didn’t last too long – WHOOPS. ?

Here’s how I made these:??
➡️In my @vitamix I blended: 2 cups of sliced almonds (raw, unsalted) + @artisanaorganics 1 cup melted coconut oil til fairly smooth. (A few chunks is fine ??)
➡️I poured the runny almond/oil mixture into a mixing bowl and stirred in 1/2 cup coconut sugar, 3/4 cup @mynaturalforce unflavored pea protein, 2 tsp vanilla extract, + 1/2 tsp pink salt until combined.
➡️Scooped out big tbsp sized balls, with my melon baller scoop, onto a lined tray and popped them in the freezer for 20 minutes. I usually store them in a bag in the freezer once they’re set up! The batch makes about 40-42 balls. ✨
