Avocado Corn Chopped Salad ???
{ Happy Monday! Here’s a quick recipe for you to use up all of that local produce! Tangy homemade dressing, and all the fresh veggies of the season in a colorful bowl! }
makes about 4 servings
Ingredients:
4 ears fresh sweet corn, husk removed, cleaned
2 small ripe avocados, diced
1.5 cups cherry tomatoes, halved
2 small cucumbers, sliced
2 Tbsp fresh basil, or parsley leaves, chopped
1/2 red onion, sliced
Dressing:
3 Tbsp extra virgin olive oil
1 fresh lemon, juiced
1 tsp raw honey
1 clove fresh garlic, pressed
1/4 tsp each, sea salt and freshly ground black pepper or to taste
Instructions:
In a small glass bowl whisk together all of the salad dressing ingredients.
Refrigerate until ready to use.
Bring a large pot with salted water to a boil. Add in corn and cook uncovered for about 5 minutes.
Immediately place corn cobs into a cold ice bath of water. Remove, set on towels to air dry a bit.
Place corn on a cutting board and cut the corn kernals from the cob.
In a large bowl combine corn with avocado, tomatoes, cucumber, red onion, and basil.
Just before serving, drizzle with the dressing and gently toss to combine. Enjoy!
