Lentil Bolognese

A wholesome dinner that is a fantastic source of protein!⠀

Vegan Bolognese Recipe (serves 3): -1 tbsp olive oil⠀
-8 oz (227g) dry pasta⠀
-1 onion, chopped⠀
-3 cloves minced garlic⠀
-2 medium carrots, diced⠀
-1 tsp dried oregano, 1/2 tsp Italian spices, 1/2 tsp chili flakes, 3/4 tsp sea salt⠀
-3 tbsp tomato paste⠀
-28 oz crushed tomatoes⠀
-3/4 cup dry red lentils, rinsed⠀
Cook the pasta according to package directions; drain and set aside. In a large pan, sauté the onion, garlic, and carrots with oil for 4-5 minutes, until slightly softened. Add in spices and tomato paste and to evenly, then stir in crushed tomatoes and lentils. Bring to a simmer, then cover and cook on low for around 15 mins, stirring occasionally. Once lentils are tender, serve over cooked pasta and enjoy!
