{NEW} Instant Pot Artichokes ?

Peak artichoke season is March through May!

Have you jumped on the Instant Pot craze yet?!! Do you use your pot often? Maybe you got one for Christmas and haven’t even opened it up yet?! This is a good recipe to try-out if you LOVE artichokes & you’re still an Instant Pot newbie.

These turned out great! I much prefer cooking artichokes in the IP because they don’t get so water logged!

1-4 Artichokes
1 1/2 cups water, or vegetable broth
1/2 a fresh lemon, sliced
2 cloves fresh garlic, chopped
1 tsp sea salt
1 sprig of thyme or any other favorite herb

Cut stem and tough outer leaves off of your artichokes. Cut the top inch or two off the top of your artichoke.

Add water/broth, lemon slices, garlic, sea salt, and thyme to your Instant Pot. Set rack inside and place your artichokes on top of the rack, stem side up. Close the lid, and set steam release knob to the sealing position.

Set manual setting to 10 minutes. When cooking cycle is finished, release the steam by turning the knob to venting. For larger artichokes, allow 15 minutes. You can tell when artichokes are done when a knife slides into the bottom easily.
Remove from pot and enjoy!

Notes: *We like to dip our artichoke leaves into fresh squeezed lemon and melted ghee. *To eat, pull off a leaf and scrape the meat off the tender end with your teeth. ?Rachel
