{NEW} Shredded Chicken Cobb Salad ⏰⌛?
{ Daylight savings time change is kicking my butt today. After staying out late with the family last night, then losing an hour of sleep? I’m feeling it! What about you? Did you know that Arizona doesn’t participate?? …So, there is a way out of this yearly disturbance…just a cross-state move…no big deal…I’m fine ?
Anyway, I’ll save you from my delirious ramblings and comfort you in the knowing that at least we can make a SUPER SIMPLE dinner tonight, then hop into bed a bit earlier. ?
makes 2-3 servings
Ingredients:
1.5 cups shredded cooked chicken
4 cups packed salad greens of choice
1 Tbsp olive oil
2 Tbsps apple cider vinegar
1 ripe avocado, sliced or chopped
1 cup quartered cherry tomatoes
1/2 small red onion, sliced
2 hard boiled eggs, peeled and halved or sliced
1/4 cup crumbled cheese of choice such as blue cheese or feta
sea salt and fresh ground black pepper, to taste
1/2 tsp chili flakes, to garnish
1/4 tsp dried parsley or 1 Tbsp fresh chopped parsley, to garnish
Instructions:
Add greens of choice to a large bowl, sprinkle with sea salt and pepper and drizzle with your oil and vinegar.
Gently toss to combine, then top with remaining ingredients as shown.
Sprinkle with crumbled cheese, chili flakes, and parsley.
Serve immediately and enjoy!
