Rainbow KABOCHA SQUASH pasta bowl for lunch today ? apparently I missed #nationalpastaday yesterday so I had to make up for it! This Kabocha squash sauce is so simple, so creamy and perfect for a Mac and cheese alternative! NOTE: SAVE the PASTA WATER for this sauce (see recipe below). Deets: greens, avocado and hemp, tomatoes, roasted Brussels (roasted in coconut aminos and coconut oil), vegan cheese crumbles and @eatbanza pasta. Sauce: about 1 cup roasted (or steamed) kabocha squash, 1 tablespoon olive oil, 1/2 cup of the warm water from boiling the pasta, 1/2 teaspoon onion powder, 1 clove garlic, squeeze of lemon, 1/2 teaspoon salt and a couple dashes of pepper. Blend all@ingredients until smooth
