Sunday morning ready to stack up on some fun activities! I hope everyone has been having a great weekend so far.

Hey everyone! Happy Sunday! I hope you are all having a fantastic weekend so far. I started my day with a refreshing bike ride along the water, followed by a visit to Trader Joe’s. Originally, I had planned on attending a spinning class, but when I stepped outside and felt the decrease in humidity, I couldn’t resist the opportunity to hop on my bike instead. Cycling is my ultimate happy place and a great way to boost my mental health. After a hectic and stressful week, this ride was exactly what I needed – just me, my bike, and the fresh air. It was pure bliss.

When I got back home, I decided to whip up a delicious stack of acorn squash pancakes topped with strawberries, banana, chocolate syrup, and sunflower butter. The combination was absolutely mouthwatering. I truly believe that Sundays were made for enjoying good food and relaxing. If you’re interested in making these pancakes yourself, check out the recipe below:

Ingredients:
– 1 cup steamed acorn squash
– 2 tablespoons coconut flour
– 1/2 scoop protein powder
– 4 egg whites
– 1 egg
– 1/2 teaspoon cream of tartar
– 1/4 teaspoon baking soda
– 1 scoop collagen
– Cinnamon

Instructions:
1. Blend all ingredients in a blender until smooth.
2. Spray a skillet with avocado oil and pour the batter onto the pan.
3. Allow each pancake to bubble before flipping.
4. Top with your favorite toppings and enjoy!
