Meal preppin’ for the week with this hearty roasted vegetable, quinoa + chickpea salad 🌿 I’ve said before that I don’t usually meal prep entire meals for the week, and that’s why I love bowls like this that have ingredients that I eat on a daily basis, that can be thrown together into a bowl or used as a component for different dinners as well 🙌🏼 I like to spend Sundays very relaxed so I’m refreshed for the week ahead , so other than meal prepping I’m spending this Sunday doing other things that I love like going for a nice long run, walking around my neighbourhood (and buying delicious bread 🤤) and relaxing with some TV and reading ✨ I hope you all have a refreshing Sunday! 💛.

Roasted sweet potato, carrots, chickpeas and beets tossed in a tbsp of coconut oil, garlic powder, smoked paprika and salt to taste, + quinoa, kalamata olives, arugula + a tahini, lemon juice, maple syrup, Dijon mustard dressing ✨
