VEGAN MAC + CHEESE because it’s all I could think about allll morning 😍I’m such a believer in listening to our cravings and what our bodies are telling us it needs ✨ Sometimes that’s a salad with all the veggies and roasted chickpeas, and other times is a big bowl of my butternut squash mac and cheese 😍 This cheese sauce can be made ahead of time for quick meal assembly, and can be used on pretty much anything! 💫.
Cheese sauce recipe (about 2.5 cups):
Dice 1/2 medium butternut squash (about 3 cups) into small cubes and steam until tender. Add to a high speed blender with 1/3 cup nutritional yeast, 1 tsp garlic powder, 1 tsp onion powder, the juice of 1/2 lemon, 1/4 cup plant based milk, 3/4 tsp salt + 1/4 tsp pepper. Blend on high until silky smooth and use on everything 🤤
