You don’t have to be afraid of pasta. There is a way to make it HEALTHY.
12 ounces pasta of your choice (I used red lentil penne pasta)
Vodka Pasta Sauce:
1 small yellow onion, diced
3 medium garlic cloves, minced
2 tablespoon tomato paste
1/4 teaspoon crushed red pepper
1 28-oz can whole tomatoes
1/3 cup vodka
1 cup raw cashews + 1 cup filtered water
1 tsp salt
1/2 tsp pepper
1. In a medium pan, add in diced onions and cook until lightly browned, about 5 minutes. Stir in garlic, tomato paste, and crushed red pepper and cook until fragrant, about 1 minute.

2.Remove pan from heat and stir in whole tomatoes and vodka. Return to heat and simmer until alcohol cooks off… about 7 to 10 minutes, stirring occasionally.

3.Transfer sauce to a blender adding 1 cup filtered water & 1 cup raw soaked cashews and puree until smooth. Pour back into saucepan.

4. Heat until warmed through, about 7-10 minutes on low heat. Season with salt and pepper to taste.

5. Meanwhile cook your pasta according to the directions on the package. (I used red lentil penne pasta.) 6. Once the pasta is cooked and your sauce is heated through, pour your pasta into the the sauce, mix and top it off with vegan parmesan (parm recipe on the blog)
