Good morning everyone! Can you believe it’s already Wednesday and you know what that means – WAFFLE Day! I absolutely love the holiday week schedules and I truly hope that all of you had a wonderful 4th of July. My holiday was incredibly relaxing this year, filled with sunshine, some cooking, and quality time with good friends. The weather here in Boston has been absolutely gorgeous and I am soaking it all in. I also have a slightly lighter work week ahead, which means I am looking forward to relaxing a bit more and catching up with some friends. How was your holiday? Did you have any favorite food traditions for the 4th of July?

I actually whipped up a new recipe for a BBQ yesterday and I can’t wait to share it with you all a little later. But for now, I am indulging in some delicious kabocha waffles topped with berries, coconut milk yogurt, cashew butter, and cocoa syrup. It’s a perfect way to kick off this HUMP DAY!

Oh, and just a quick tip – I use protein in my waffles.

Now, onto the recipe:
Ingredients:
– 1 cup steamed kabocha squash
– 2 tablespoons coconut flour
– 1/2 scoop vanilla protein powder (or any other protein of your choice)
– 4 egg whites
– 1 egg
– 1/2 teaspoon cream of tartar
– 1/4 teaspoon baking soda
– 1 teaspoon maca
– 1 scoop collagen
– 2 tablespoons cashew milk
– Cinnamon

Instructions:
1. Blend all ingredients in a blender until smooth.
2. Spray waffle maker with avocado oil and cook according to the machine instructions.
3. Enjoy your delicious waffles!
