?Cauliflower + Yellow Lentil Curry? Because I could eat curry everyday!?Have a fab day friends.
?Recipe: Sauté 1 finely diced onion is 2 tbsp heated neutral oil a few minutes until translucent. Add 4 minced garlic cloves, 1 tbsp finely grated ginger, 1/2 tsp turmeric, 1/2 tsp curry powder and sauté another minute. Add 4 tbsp red curry paste and mix while sautéing another 30 seconds. Add 3 cups low-sodium veggie broth and 2 cups water. Bring to boil, add 1-16oz (2-1/4 cups) yellow lentil. Mix and reduce heat to simmer. Simmer uncovered until lentils tender, about 20 minutes. Add 1 head cauliflower (florets cut into bite-size pieces). Simmer until cauliflower is cooked. Stir in 2 cups frozen peas and heat another few minutes. Salt to taste. Served with @lotusfoods rice.
