Dukan Diet “Chocolate Salami” Cake
This recipe is suitable for the Cruise phase of the Dukan Diet (PV days).
Ingredients:
- For the Base:
- 4 tablespoons oat bran
- 2 tablespoons wheat bran
- 2 eggs
- 4 tablespoons fat-free cottage cheese (or fat-free Greek yogurt)
- 1 teaspoon baking powder
- Sweetener (to taste, erythritol or stevia recommended)
- 1 teaspoon vanilla extract
- Pinch of salt
- For the “Chocolate” Sauce:
- 2 tablespoons unsweetened cocoa powder
- 4 tablespoons fat-free cottage cheese (or fat-free Greek yogurt)
- Sweetener (to taste)
- Water (to adjust consistency)
Instructions:
- Prepare the Base:
- Preheat oven to 180°C (350°F).
- In a bowl, combine oat bran, wheat bran, baking powder, and salt.
- In a separate bowl, whisk eggs, cottage cheese, sweetener, and vanilla extract.
- Combine wet and dry ingredients, mixing well.
- Line muffin tins with parchment paper or use silicone muffin molds.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let the bases cool completely.
- Prepare the “Chocolate” Sauce:
- In a small bowl, combine cocoa powder, cottage cheese, and sweetener.
- Add water gradually to achieve a smooth, spreadable consistency.
- Assemble the Muffins:
- Spread the “chocolate” sauce evenly over the cooled bases.
- After spreading the “chocolate” sauce, refrigerate for at least 1 hour to allow the layers to set.
- Remove the muffins from the molds and serve.
Important Notes:
- Adjust the amount of sweetener to your taste preference.
- Practice portion control, even though this is a diet-friendly treat, moderation is key.
- The “chocolate” sauce in this recipe may not replicate the exact taste of real chocolate, but it offers a Dukan-approved alternative.
